Spinach Mushroom Soup

Green is good! A super nutritious and tasty soup that Popeye the Sailorman would go crazy for can be moments away.  This is the perfect meal if you’re feeling a little energy depleted or feeling like you might be coming down with a cold.  Purchase all organic ingredients for extra assurance of top shelf health benefits!



  • 1 16 oz box Organic Vegetable Broth
  • 6 big cloves of garlic, chopped
  • 2 T minced fresh Ginger Root
  • 1 carrot, shredded
  • 1 onion, sliced thin
  • 2 T butter
  • 2 C fresh mushrooms, sliced thick
  • 1lb bag fresh spinach
  • 1/8 t pepper
  • ¼ t salt
  • 3 “nests” of Vermicelli noodle
  • 1C water
  1. Place the garlic, onion, and butter into a large pot and sauté to wilt the onion.
  2. Pour the broth into the pot and heat for 5 minutes.
  3. Add water, carrots and Ginger Root, and heat to boil.
  4. Turn burner down to simmer and cook for 10 minutes.
  5. Add the mushrooms to the pot.
  6. Add the pasta nests into the pot (I like to crush them into the mixture)
  7. Cook for 5 minutes on low heat.
  8. Gently stir in the fresh spinach and heat for 5 to 7 minutes, until it wilts into the broth. Stir in salt and pepper, and ladle into bowls.

Serves 2 – 4 people

    Oh my, this soup is just delicious. I made it for lunch and had a friend over. We both enjoyed every bite. The fresh ginger and garlic gave it both a delectable scent and flavor. I can tell that this will become a staple at my house.
