Cagin’ Catfish

South Dakota Catfish sure are clean and tasty!  This fish recipe takes just a few minutes to prepare, and about 20 minutes to cook. It’s great with a side dish of greens.

Fish

2 Fresh Caught Catfish Fillets

½ onion, sliced or chopped small

1 Roma tomato, chopped small

3 cloves fresh garlic, sliced thin078

¼ t Black Pepper

1/2 t Cumin

1/2 t Cayenne Pepper

 

Rice*

½ C brown rice

½ C basmati rice

2 Chicken Boullion Cubes

2 T butter

  • Place rice in rice cooker* with crushed cubes, butter, and water (about ½ inch over the top) and cook.
  • Sprinkle both sides of the fish fillets with the 3 spices to lightly cover.
  • Lay fillets on lightly greased foiled pan.
  • Cover with the onion, garlic and tomato.
  • Once rice is more than half ways cooked:
  • Cover fillets with foil and cook at 375 for 15-20 minutes.  Fish is done when it becomes flaky.

Plate cooked fillets on bed of rice, arrange tomato-onion mix on top.  Serve with your favorite greens.
